i'm juicing + green lemonade
i wandered by the kitchen appliances at a big box store on the weekend, and ended up walking out with a juicer. this is actually my second juicer. i got one for christmas when i was maybe ten, but only used it once before realizing it was easier to just drink orange juice that came in the carton. almost 20 years later, i'm giving it another try.
anyway, this green juice is really good. especially if you like lemonade. i am obsessed with lemon juice lately, so this drink is perfect for me. i've been drinking this stuff like it's my job since i got the juicer 48 hours ago. for the record, i got the jack lalanne juicer.
green lemonade (recipe adapted from here)
4 stalks celery
1 lemon, peel cut off
half an apple
half a cucumber
a handful of romaine (optional, but i added it and loved it)
-juice everything together in the juicer, stir, and drink right away.
note: you will end up with a bunch of pulp. there are lots of things you can do with it. i like to add vinegar and eat it like a salad. really flavourful.

my fav spinach smoothie
i just want to say thank you for all the kind words about our accident. j and i are feeling super grateful.
i've been drinking a lot more green smoothies lately. maybe i'm trying to be extra healthy before the wedding/honeymoon. i dunno. this one is my fav
spinach smoothie
1 cup orange juice
1 packed cup spinach
1 frozen banana, chopped up (soo much better if the banana is frozen)
add the orange juice and spinach to the blender. blend that up until it is super smooth. if it isn't really nice and smooth at this point, add a little more juice or some water or almond milk
then add the banana.
notes:
sometimes i add a little honey.
for a while i was also adding berries, but then the colour is really ugly. but it still tastes good.

paleo chocolate ice cream
this is actually the best thing in the world. between chocolate mousse, chocolate pudding, and this ice cream, i pretty much go through a tin of cocoa every week.
paleo chocolate ice cream:
2 frozen bananas sliced up
1 tablespoon maple syrup or honey
2-3 tablespoons cocoa
1 tablespoon almond milk
all in the food processor. so easy, and i'd say pretty much the best soft serve ice cream i ever had. also, i am definitely not on the paleo diet. i am just really into how many paleo recipes have banana, cocoa, and coconut.

chocolate coconut mousse
i make this every other day. it is so quick, and so good, and you don't even need a food processor. i got the idea from here, where i get almost all of my dessert recipes.
chocolate mousse:
1/2 can cold coconut milk
2 heaping tablespoons cocoa powder
1 tablespoon maple syrup
mix it up really really good. it's the best. i think it would be good on top of chocolate pudding.

easy vegan 4 ingredient chocolate pudding
i love this stuff. best pudding ever. i would eat this every day with whipped cream on top.
chocolate pudding:
1 banana
1 avocado
3 tablespoons cocoa (or more, whatev)
1-2 tablespoons maples syrup (or some other sweetener)

"healthy" chocolate peanut butter balls
the holidays are making me want baked goods. chocolate covered peanut butter balls have always been my fav. when i was looking up recipes for them, i realized they are typically just icing sugar, peanut butter, chocolate, shortening. not cool. these ones are way healthier and easy as long as you have a food processor. and they taste amazing. i meant to bring them to work, but j and i just ate half of them.

chocolate peanut butter balls:
3/4 cup natural peanut butter
1/4 cup peanuts, ground in food processor
1/4 cup flaked coconut, ground to flour in food processor
1 cup oats, ground to flour in food processor
1/2 cup maple syrup
2 tsp coconut oil
1 cup chocolate chips
1. mix peanut butter, peanuts, coconut, oats, maple syrup in a bowl until a dough forms. add more flour or more peanut butter if needed to get thick dough-like consistency
2. roll into little balls, refrigerate on cookie sheet for 30 minutes
3. melt chocolate and coconut oil together, place balls into chocolate one at a time, fishing out with a spoon, and place on cookie sheet
4. refrigerate until hard

unreal amazing raw chocolate layered cheesecake
so jon got me a food processor, and now i can make all these raw recipes that look so good. i made this cake on the weekend, and i seriously think it was one of the best desserts i've had. and it's healthy. like, there's nothing bad in it. i used this fake cheesecake for a layer, and this fudge cake for another layer. but basically, the main ingredients are nuts, banana, coconut, cocoa.
i never thought i'd be someone who wanted a kitchen appliance as a gift.
also, my wedding planner is so close to finding my wedding venue. very excited
